Cooking Recipes - The Palermo Cutlet

That's right until now you only knew the Milanese cutlet, but here, in Sicily, where I live because it is married, I learned a different cutlet.

In these summer months, you can do it many times, and not only that, but you can also bread with various types of sliced ​​fish, and the breading can also be a filling according to your imagination.

Let's start...

1st step

First, you have to press the crumb, I prefer it coarsely chopped, but you can use any type and you could even crumble some slices of bread.

Add salt, pepper, finely chopped garlic, oregano or parsley to the crumb according to your taste, and grated cheese, which could be parmesan or pecorino, the original Sicilian recipe was with pecorino, but especially the kids prefer parmesan. But that's not all ... At this point add some good extra virgin olive oil, but enough to make the crumb nice and moist but not kneaded. This crumb, if in excess, you can keep it for a few days in the fridge and use when you need it.

2 * step

Now take some slices of meat, I prefer veal rump because it is tender and lean, it would be tender meat for scallops, with slices about one centimetre thick.

Put the slices on a plate, salt them and wet them all with the oil, rubbing them all at once with your hands.

3rd step

Take the slices dipped in oil, and pass them all into the crumb.

4th step

put the slices in a small oven in oven for 5-7 minutes until you see some crust. You could also use the air fryer for 5-6 minutes at 180 degrees, or the traditional oven function incorporated in the microwave, but I do not recommend the combined function (oven and microwave)

These cutlets are fast, not fried, without eggs, and above all very fragrant.

Strange to say, I never found the recipe in any cookbook!
