To make a 0 alcohol beer, one of the most commonly used processes is fermentation at lower than normal temperatures and that is interrupted right after starting, so not all the sugar is fermented. That's why many of these beers are sweeter or have a more pronounced malt taste. A more limited fermentation is required for their production.
