Pineapple Pudin
Preparation Time: 60 Minutes.
Yield: 10 Portions.
INGREDIENTS:
- 10 eggs;
- 450 g of sugar;
- 1 can of pineapple in syrup (separate 3 slices for garnish);
- 1 packet of shredded coconut;
- 1 tablespoon (well filled) butter;
- 1 tsp vanilla essence;
- 10 plums.
METHOD OF PREPARATION
Blend the eggs, sugar, vanilla, pineapple (without syrup) and beat. Then put the butter and beat again. Pour into a pyrex, place the grated coconut and stir lightly. Grease a pan (hole in the middle) with plenty of butter and sprinkle with flour. Bake in the regular oven. Garnish the pudding with the halves of the reserved pineapple slices and the plums.
